The Dirty Cowgirl Saloon is a full-service restaurant and bar located in Wasco, Oregon, that provides lunch and dinner options to locals and travelers. The business originally began its operation in Goldendale, WA, first as a food cart and then a full-service restaurant during the Covid-19 pandemic.
In 2022, the Dirty Cowgirl moved to Sherman County with a business plan to provide an inviting and comfortable place with great food and drinks, where locals and travelers could meet and connect. The building purchase, initial remodel and restaurant opening were all done without outside funding or hiring contractors, and in November the Dirty Cowgirl opened its doors for business as a classic saloon, rough and ready, in true Sherman County style.
Business owners Celeste Jackson and Kory Geddes have continued to work towards their long-term business plan’s two main goals: to provide high-quality food in an inviting and comfortable dining experience. In pursuit of their goal to provide the restaurant experience that locals want, they have modified their menu to include offering breakfast, soft serve ice cream and espresso beverages, all based on customer feedback. After the first winter’s operation, they were ready to address the building improvements needed to create the comfortable and inviting dining experience that will ensure their restaurant’s long-term success.
The renovations needed to improve the building’s energy efficiency and accessibility for customers required major remodeling, including removal of the diesel heat and installation of a new heat pump, adding a door to the outdoor seating area, making the front entry ADA compliant, repairing and upgrading equipment, and replacing a broken skylight and some windows. Because their restaurant is located in Sherman County, Celeste and Kory were able to access the capital they needed through MCEDD’s business lending program after they were denied a loan at the bank to fund their remodel.
